Thai Chicken Salad

Ingredients

  • Minor’s Chicken Base

  • Coconut milk

  • Ginger, fresh, peeled

  • Lime, zest and juice

  • Sesame Oil 

  • Salt

  • Sugar, Agave, Other Sweetener

  • Chicken, Poached in Minor’s Chicken Base, shredded

  • Chilis, Fresno or Jalapeno, sliced

  • Red Cabbage, shredded

  • Carrots, shredded

  • Bamboo Shoots, sliced

Build It

  1. Combine the dressing ingredients in a blender and blend until smooth. Adjust seasoning.
  2. Combine chicken salad ingredients in a bowl. Fold in dressing.
  3. Cover with plastic wrap and refrigerate for at least 1 hour. Taste to adjust seasoning.
  4. Serve as is, in lettuce cups alongside chips.
