Bases are mostly utilized to make flavorful broths, but can be used also to season dips, marinades, rubs and more. (See Plus One Matrix) Flavor Concentrates add consistent, measurable flavors to your dishes.
These flavors are comparable to using fresh ingredients, without the labor or inconsistency of flavor or heat profiles that you sometimes get using fresh ingredients.
The appropriate storage and handling requirements for MINOR'S® Bases and Flavor Concentrates are determined by a number of factors. For food safety, the product would need to have a high salt level (low water activity) or high acid level (low pH) to be shelf stable.
For the Flavor Concentrates, in many cases, these products do not meet the pH or water activity requirements to be held for long periods of time at ambient conditions.
The MINOR'S® Product Development team completes shelf life studies for sensory aspects of these products. In some cases, we have found that the product will not perform as expected for the duration of the expected shelf life at ambient temperatures, but will maintain proper, high quality sensory performance, if kept at refrigerated temperatures. Refrigeration or freezing slows the degradation of sensory attributes over time.
The MINOR'S® Flavor Concentrates line provide different power punches in unique flavors like Ancho, Roasted Garlic and Masala Curry. It saves on labor like a base.
