For the Flavor Concentrates, in many cases, these products do not meet the pH or water activity requirements to be held for long periods of time at ambient conditions.
The MINOR'S® Product Development team completes shelf life studies for sensory aspects of these products. In some cases, we have found that the product will not perform as expected for the duration of the expected shelf life at ambient temperatures, but will maintain proper, high quality sensory performance, if kept at refrigerated temperatures. Refrigeration or freezing slows the degradation of sensory attributes over time.
