Add the chicken breast, red onion, pineapple, and poblano to the marinade and mix to thoroughly coat. Cover bowl with plastic wrap and place under refrigeration to marinade for a minimum of 1 hour. Build skewers by alternating pieces of marinated chicken breast, red onion, pineapple, and poblano on a water-soaked skewer.
