Chili Lime Chicken Skewers

Ingredients

  • Oil, Vegetable

  • Chili Lime Seasoning

  • MINOR’S® Chicken Base, Original

  • Chicken Breast or Chicken Thigh, 1” Cubes

  • Red Onion, 1” Pieces

  • Pineapple, 1” Cubes

  • Poblano, 1” Pieces

  • Skewers, Soaked in Water

  • Lime Wedges

  • Cilantro

Build It

  1. In a bowl, create marinade by mixing the vegetable oil, chili lime seasoning, and MINOR’S® Original Chicken Base.
  2. Add the chicken breast, red onion, pineapple, and poblano to the marinade and mix to thoroughly coat. Cover bowl with plastic wrap and place under refrigeration to marinade for a minimum of 1 hour.
  3. Build skewers by alternating pieces of marinated chicken breast, red onion, pineapple, and poblano on a water-soaked skewer.
  4. Place skewers on hot grill and cook until the internal temperature on the chicken reads 165°F.
  5. Transfer to a serving dish and garnish with lime wedges and cilantro. Add preferred dipping sauce. Serve!
