Chicken Ancho Adobo


  • Soy Sauce, ap or light

  • White Vinegar

  • Brown sugar

  • Bay Leaves

  • Whole Peppercorn

  • Onions, chopped

  • Garlic, fresh cloves

  • MINOR’S® Ancho Flavor Concentrate

  • Chicken thighs, boneless, skinless

  • White Rice

  • Scallions

Build It

  1. Marinate the chicken in soy, vinegar, sugar, spices, garlic, onions, and ancho concentrate for 30 minutes.
  2. Braise chicken by searing in a pan and deglazing with marinade. Cook on a low simmer until cooked through, about 25 minutes.
  3. Make rice by simmering in seasoned water or using a rice cooker.
  4. Plate chicken over rice.
  5. Garnish with scallions and serve with a pickled salad.
