Tortilla Soup Ingredients Onion, chopped Green bell pepper, chopped Neutral Oil Fresh garlic, chopped Dried cumin Dried oregano Chipotle powder Crushed tomatoes, canned MINOR’S® Classical Reductions Reduced Vegetable Stock Black beans, canned, drained, rinsed Corn kernels, frozen Lime juice Avocados, diced Fresh cilantro, chopped Lime juice White onion, small diced Sour cream MINOR’S® Chipotle Flavor Concentrate Lime Juice, as needed Tortilla Strips, fried Build It Sweat the onion and bell pepper in neutral oil until tender. Add the garlic, cook for 30 seconds, or until fragrant. Add in the spices, and cook for another 30 seconds. Pour in the crushed tomatoes, prepared MINOR’S® Classical Reductions Reduced Vegetable Stock, black beans, and corn kernels. Simmer to allow the flavors to develop, about 20 minutes. Add lime juice and adjust seasoning. Mix all salsa ingredients in a bowl, cover and chill until use. Whisk sour cream and MINOR’S® Chipotle Flavor Concentrate in a medium bowl. Thin crema with lime juice or water as needed to desired consistency. Ladle Soup into a bowl. Top with a scoop of avocado salsa. Drizzle crema on top. Garnish with fried tortilla strips.
